During melting, citric acid is added at a dosage of 0,5 kg per 1.000 kg of butterfat. The melted product is then transferred through a preheater and heated to approximately 80–85 °C before entering the separation section. The melting and preheating equipment are excluded from the scope of supply., Prior to Separator #01, the butterfat is mixed with hot water for a washing step.
